Chablis, Domaine Phillippe Goulley
Philippe Goulley began his
conversion to organics in 1991 when he planted his first vines in the Petit
Chablis appellation. Stretching to just 2.5 hectares, this remains his largest
site. He now has 0.75 hectares in the Chablis appellation and 1.25 hectares in
the Premier Cru Montmains appellation. In the winery, fermentation is in
temperature-controlled stainless steel vats and no yeasts are added at any
stage, whilst sulphur dioxide levels are kept to an absolute
minimum.
Tasting Note A classic Chablis Chardonnay - with a
more aromatic and typically minerally approach than the Petit Chablis. This
Chablis is full bodied and powerful. Dry, rounded and slightly citric with an
elegant nose, soft fruit flavours and a buttery edge.
