Domaine Clos de Caveau
The Clos de Caveau estate lies amid woodland
below the shattered peaks of the Dentelles de Montmirail because it was
isolated and thus perfect for organic cultivation. 40 year-old vines and severe
sorting keep yields very low indeed.
Tasting Note
Earthy and
robust, with black cherry flavour and hints of rich fruitcake, this is perfect
with a hearty meat or bean stew.
